Lemon-Herb Chicken Romano

Our Christmas dinner this year gave us an opportunity to tackle the Celebrations (for times when calories don’t count) chapter from Seriously Delish by Jessica Merchant.
One thing I can definitely be on board with: a “celebration” recipe that is actually easy! We were looking for something delicious that wouldn’t take all day to prepare. This hit the nail on the head!
Ever since I saw an episode of Barefoot Contessa where Ina Garten talked about grinding up her parmesan in the food processor, I’ve used the same technique. Though this was actually Romano cheese it still worked perfectly!
Then all you need to do is set up a breading station. You’ll have a bowl with flour, garlic powder and parsley. The second bowl is beaten eggs with a bit of milk. The third bowl is all cheese.
After seasoning the chicken, we just dredged each piece through the series of bowls. I was very impressed by how well the cheese stuck to the meat! Then we cooked it on the stovetop to get each side browned.
Once browned, we removed the skillet from the heat and added a quarter cup of white wine, chicken stock, lemon juice, butter, and lemon slices.
Pretty much chicken’s best friends all in one pan!
We covered the pan in foil and baked them for about 20 minutes. While they baked we boiled some bucatini to accompany our meal. So, so easy!
Taste Report:
One of my favorite bagel flavors is Asiago Cheese. I’m excited to tell you that statement is relevant because the crust of this chicken tastes just like the baked cheese topping of an Asiago Cheese bagel. It’s a complex cheesy flavor - ha! I just loved it.
In a moment of inspiration, I squeezed one of my roasted lemon pieces all over the chicken. Gosh… so good! We also had chopped up some parsley to garnish. I think fresh parsley makes everything special!
The simple buttered bucatini was excellent alongside the chicken. I can’t tell you how many times I said “mm mm mms” during our Christmas dinner.
I didn’t take a picture, but we had the leftovers for lunch the following day. Still so delicious!
Mess Report:
Honestly the mess wasn’t too bad for a special dinner. A lot of it was able to go into the dishwasher which helped!
Is it odd to add a “Celebration” recipe into your weeknight rotation? I’m willing to find out!
