Chicken Pot Pie

This one is from the Dinner chapter of Magnolia Table. We really wanted to make Chicken Pot Pie and looked through our books until we found this recipe.

Bonus: the top crust of this recipe is another use for Jojo’s Biscuits. Remember how I gamed the system to make it for the Desserts entry because I had a different breakfast recipe I wanted to use? I didn’t even realize it would be part of this one! Now it’s probably time for me to get working on that other breakfast recipe.

We used a rotisserie chicken from the grocery store for this recipe so our first step was to get that shredded. We also chopped up the carrots and onions.

You soften the onions and then add the carrots to soften as well. I made a bit of a mistake and followed the carrot cooking time recommended by the recipe rather than testing if they were actually soft before moving on. Lesson learned!

The next step is to add just a bit of flour to help thicken the soup.

As with so many of the Magnolia Table recipes we’ve tried, this one is so easy! You add in chicken broth and cream of chicken soup. We seasoned with a bit of salt and pepper and then dropped in some frozen peas.

To assemble you can either make Jojo’s Biscuits or use store-bought crescent roll dough. I wouldn’t hear of using store-bought!

We actually cut the original recipe in half when we made this. At the time, the only casserole dish we had was this small round one. Only about half the soup we made fit into it!

We used the technique of covering the top with little bits of the biscuit dough.

We baked this with a sheet pan underneath to catch any possible drips. It didn’t end up being necessary, but better safe than sorry! I think it looked really nice and crusty after it baked up. We left it in the oven a bit longer to make sure the topping would be fully golden.

Taste Report:

Although we made this on a sunny August evening, we agreed it would be perfect for a rainy night. I think the biscuit topping was my favorite part of this!

We made some notes for ourselves: use more chicken and be sure to fully soften the carrots.

Mess Report:

I think these two images tell the story pretty accurately!

What makes any mess worth it, though, is the ability to freeze the leftovers for mess-less weeknight dinners!

Leftover Report:

I absolutely love when I can include a leftover report! As I mentioned earlier, even though we halved the recipe we still could only fit half of it in our casserole dish.

This got my brain super excited! We could freeze the second half of both the soup and the biscuit dough!

So while we had true leftovers from our original batch that were perfect for lunch, we also had an entire second round in the freezer for a cozy dinner with minimal effort! Happy dance!

I rolled out the biscuit dough so that we could just place the whole thing on the top of the dish once we made it.

We thawed the soup in the refrigerator and warmed it on the stove prior to baking. It was just as excellent!

Okay, enough reminiscing! We made this one again in December and included all of our previous notes. It’s absolutely delicious and awesome that you can freeze half of it for another round of dinners/lunches. It wasn’t a rainy night when we made it, but it was freezing cold - this really was perfect!

The second time around we actually used two pounds of chicken breasts that we cooked in our crock pot. This gave us what I would consider a much better amount of chicken for the soup!

Although we again halved the original recipe, this time we used the full amount of the vegetables. I think this was a lot better! We also cooked the carrots longer to get them fully soft prior to adding the soup ingredients.

All of our edits made it even heartier - I think the picture comparison shows that quite well!

Love a recipe that becomes part of our normal life!
