Guacamole

This quick snack came from the Appetizers & Starters chapter of Magnolia Table.
One unexpected outcome of this project has been that I’ve become a huge avocado lover! It all started with the chicken tortilla soup. I ended up enjoying it so much as a topping that I started buying avocados all the time.
I’d never made guacamole before. Mostly because I really hate cilantro. I’ve had good guacamole where I didn’t mind the cilantro, though, so I decided to give it a shot!
This recipe is mostly about chopping everything up and then seasoning however you like it. Nothing complicated or time-consuming!
Note the meagerest amount of cilantro hiding behind the limes. Barely noticeable is the only way to go with cilantro.
This next photo shows me using a fork to smash the avocado. That was a short-lived method. A potato masher did a much more efficient job!
Another favorite kitchen tool I’ve picked up for this project: my citrus juicer! I love this one!
Once everything is mixed together, I added salt and pepper and adjusted the amounts of some other ingredients. That was it!
Taste Report:
This was a learning experience for me! I think it would be better with more of all the mix-ins. Tomatoes, red onion, jalapenos, etc. I could probably also drop the entire pretense of using cilantro. I didn’t miss it, and that could save a lot of chopping time!
Mess Report:
There really wasn’t much in the way of dishes from this recipe! I did feel like the kitchen was a bit of a disaster, but it was easily picked up!
One thing that made me laugh about the recipe: it states that the guacamole only last for 6 hours. I put it in a mason jar and enjoyed this snack for about 3-4 days. That works for me!
