Another catch-up post! This one from the Vegetables chapter of Barefoot Contessa Back to Basics. Ina is “turning up the volume” on a sautéed corn dish with Confetti Corn. Who could resist trying a recipe with such a cute name? I originally made this back in July and then made it again a few weeks later with my own twist.

The prep for this recipe includes lots of chopping! Orange bell pepper, red onion, fresh herbs in addition to removing the corn kernels from the cobs. Overall, not too difficult!

Once all the prep is complete, you begin the cooking process in a large sauté pan. The red onions cook first for several minutes until softened. Then the orange bell pepper is added. The next step is rather indulgent with 2 tablespoons of butter being added to the middle of the pan and allowed to melt in. Once the butter is completely melted, you add the corn and cook for just a few minutes.

Taste Report:

This corn was beyond delicious! From the fresh corn and herbs to the delicious peppers and onions - everything worked perfectly together! It’s also extremely beautiful with all those colors. The recipe truly lives up to its confetti name.




Mess Report:

Here’s a full-kitchen shot of the mess from this recipe (and the others we made the same day). This one isn’t too bad mess-wise. It mostly comes down to your cutting board and the sauté pan. Totally worth it!

Take Two Report:

We actually loved this recipe (and it was easy enough) to make it again! I tested out a few ideas of my own the second time around. I ended up doubling the orange bell pepper and cutting it much smaller (half inch squares). Honestly, I realized that size is what the recipe calls for and I just cut them too large the first time. I also substituted 1 finely diced jalapeno for the fresh herbs. I did that because we intended to use it in a burrito bowl!

I’ll leave you with one final photo from the original recipe. We enjoyed the confetti corn with ribs, margaritas, and the chocolate-peanut butter cookies from my last post. Yum!
